Pork Chop and Hash Brown Casserole

Yes, I have a slight Six Sister's Stuff obsession.
But, they share good, easy eats.  So, what's a busy mom to do except make some of their recipes for dinner!

I was reading my blogs and I saw this recipe for a Pork Chop and Hash Brown Casserole.

This recipe will feed up to 6 people.  It directly correlates to the number of boneless pork chops that you have.  If you have 5 chops, like I had, don't try to feed 6 people.  I was worried about cooking with Cream of Celery soup.  I am not opposed to the "cream of" soups.  I am just not the biggest fan of celery flavored foods and I seldom eat cooked celery.  I am happy to report that the Cream of Celery works great in this dish.  I loved it.  I added the dried onions because my husband and I love cooked onions.  If your family doesn't skip them.  Don't skip the French Fried onions, though.  Nom Nom Nom.

All you need is:
4-6 boneless pork chops
1 Tbs. vegetable oil
Seasoned salt, to taste
1 (10.5 oz.) can condensed cream of celery soup
1/2 cup milk
Before Cooking in the Oven
1/2 cup sour cream
1/4 tsp. pepper
4 Tbs. butter, melted
1/2 tsp. garlic powder
4 Tbs. dried onions
1 (32 ounce) bag frozen hash brown potatoes
1+ cup shredded cheddar cheese, divided
6 oz. French's French Fried onions, divided



Here are my instructions:
  • The toughest part of this recipe is when you have to stir all of the other ingredients into the hash brown potatoes!  32 ounces makes for a lot of potatoes!
  • Spray a 9x13 casserole dish with non-stick spray like Pam.
  • Pre-heat the oven to 350 degrees F.  Then, brown the pork chops in a skillet using the vegetable oil.  Once browned, sprinkle them with seasoned salt and pepper.
  • In a BIG bowl, pour the hash browns in and break them up with a wooden spoon. 
  • In another bowl, mix the cream of celery soup, the sour cream, the onions, milk, pepper, butter, garlic powder, 1/2 of the cheese and 1/2 of the fried onions.
  • Pour the mixture into the casserole dish and top with the pork.
  • Bake this uncovered for 40 minutes.
  • Remove the casserole from the oven and top with the remaining 1/2 of the cheese and the fried onions.  Cook for just another 5 minutes then it's ready to eat.

    Monday - Crockpot:  Pineapple Glazed Ham with beans or egg noodles and a veggie from Six Sisters

    Tuesday -  Fish:  Parmesan Tilapia, dinner roll, Garlic Rubbed Roasted Cabbage from Everyday Maven and maybe another carb like rice or mashed

    Wednesday -  Garlic Baked Shrimp inspired by Normal Cooking (I use Stove-top tho because we LOVE it - don't hate), veggie or a salad or Veggie Spiral by Recipe by Photo

    Thursday -   Chicken, a veggie and Mom's Awesome Cheesy Potatoes from Marvelous Recipes

    Friday -   leftovers

    Saturday -  Fish: Mediterranean Tilapia, dinner roll, Seasoned Roasted Potatoes from Cook Glee with a veggie of some sort (frozen broccoli maybe but we are having broccoli on Sunday)

    Sunday -   Crockpot: Chicken Broccoli Alfredo from Six Sisters over egg noodles or linguini

    Look at my menu!  Every day accounted for and sides are even included!  I've got my grocery list together and I will pick up some ingredients when I do my Ibotta trip tomorrow.

    Fish, it's what's for dinner

    I should do a product review on this frozen tilapia soon!  It is so tasty and so easy.  I am not vey comfortable with coking fish.  It's a lot easier for me to buy it frozen and then just cook it.  I have gotten a lot more comfortable with fish over the past few years and now I sometimes defrost the frozen fish and jazz it up before I cook it.

    Here was our dinner from the other night.  Mediterranean Tilapia, Scalloped Potatoes (please don't be impressed as these are from my friend Betty), dinner roll and Szechuan asparagus.  We probably do not need 2 carbs with dinner but for once I had some spare time so I through some frozen rolls in the oven.

    Can anyone share a favorite side to serve with Tilapia?

    Recipe - Buffalo Chicken Mac & Cheese - Non-Crockpot

    My husband's coworker made this recipe first.  She brought leftovers to work and he liked the look & smell of it so he asked her for the recipe.  The original recipe came from here at the Food Network .  I always change things up a little depending on what I have on hand and my skill set.  The prep for this dish was pretty long, I would say about 30 mins.  Also, this is a RICH meal, so the week that you make this plan to serve grilled chicken and fish the rest of the week, haha!


    Ingredients:
    1 stick butter, cut into 3-3-2 tablespoons
    Kosher salt (for boiling pasta only)
    1 lb of Elbow macaroni
    1 medium onion, finely chopped
    2 stalks of celery
    3 cups of shredded rotisserie chicken
    2 cloves of garlic, minced
    3/4 cup of Frank's Red Hot sauce
    2 tablespoons of all purpose flour
    2 teaspoons of dry mustard
    2 1/2 cups of half and half
    1 pound of sharp cheddar cheese
    8 ounces of pepper jack cheese
    2/3 cup sour cream
    1 cup panko (Japanese breadcrumbs)
    1/2 cup crumbled blue cheese
    2 tablespoons chopped fresh parsley

    What I changed:
    • I used table salt, not sure if it's Kosher or not.
    • I used rotini because I didn't have a full box of elbows.
    • I added 1 tablespoon of butter.
    • I increased the onion from small to medium.
    • I skipped the celery because I only like it raw, not cooked.  Unless someone else is cooking then, it's fine.
    • I used regular chicken breasts and boiled them since I didn't have a rotisserie chicken on hand and I think that boiled chicken breasts hold up better in casseroles.
    • I used garlic powder on the chicken instead of mincing fresh garlic
    • I used powdered mustard because I couldn't find dry mustard in the spice aisle.
    • I used shredded cheddar.
    • I used a block of pepper jack that I cubed myself for easier melting.
    • I only had regular bread crumbs, not panko, so I used those.
    • I didn't have any parsley but there were some green flakes in the breadcrumbs.
    Directions:
    Preheat the oven to 350 degrees F and butter a 9-by-13-inch baking dish.

    Bring a large pot of salted water to a boil; add the pasta and cook until al dente, about 7 minutes. Drain.


    Meanwhile, melt 3 tablespoons butter in a large skillet over medium heat. Add the onion and celery and cook until soft, about 5 minutes. Stir in the chicken and garlic and cook 2 minutes, then add 1/2 cup hot sauce and simmer until slightly thickened, about 1 more minute.


    Melt 2 tablespoons butter in a saucepan over medium heat. Stir in the flour and mustard with a wooden spoon until smooth. Whisk in the half-and-half, then add the remaining 1/4 cup hot sauce and stir until thick, about 2 minutes. Whisk in the cheddar and pepper jack cheeses, then whisk in the sour cream until smooth.


    Spread half of the macaroni in the prepared baking dish, then top with the chicken mixture and the remaining macaroni. Pour the cheese sauce evenly on top.


    Put the remaining 2 tablespoons butter in a medium microwave-safe bowl and microwave until melted. Stir in the panko, blue cheese and parsley. Sprinkle over the macaroni and bake until bubbly, 30 to 40 minutes. Let rest 10 minutes before serving.

    Note:
    To help cut down on the number of pots and pans, I boiled the pasta, boiled the chicken and melted the cheese all in the same pan  (I used the same 3x, washed it in between).

    Recipe - Tater Tot Casserole (Chicken) - Non - Crockpot







    Last night's dinner was a wonderful non-crockpot recipe for Chicken Tater Tot Casserole.  I love casseroles that have a veggie, carb and a meat all in 1 dish.  Of course, I can handle making a side dish veggie but it is so NICE when I don't have to!  If you watch The Duggars, like I do, then you may have seen an episode or 2 when they are making or eating Tater Tot Casserole.  I was intrigued by this concept!  I looked on their site and googled to try and find a recipe.  What I found out though, was that I didn't really want to make a ground beef based recipe.  I finally came across this chicken based recipe and just knew that it would be a hit!

    I found this recipe on the Betty Crocker website and tweaked it to suit our tastes.
    Here is the recipe for Chicken Tater Tot Casserole:

    • 1 bag (24 oz) Green Giant® frozen broccoli and cheese-flavored sauce, or, use fresh/frozen broccoli and Velveeta. Microwave the broccoli and cheese before placing it in the casserole.
    • 2 cups diced cooked chicken
    • 4 medium green onions, diced
    • 4 cups of Tater Tots

    • 1/2 cup or 2oz of shredded Cheddar cheese

    Instructions:
    • Heat over to 400°F
    • Use a 11 x 7 casserole dish - spray lightly with cooking spray
    • Put the broccoli and cheese in the bottom of the casserole dish
    • Add the cooked chicken on top of the broccoli and cheese
    • Sprinkle the three-quarters of the diced onions on top of the chicken
    • Layer the frozen Tater Tots on top of the onions (adjust amount of Tater Tots to your family's liking)
    • bake at 400°F for 30 minutes, then remove casserole from oven and sprinkle  the cheese and onions on top.  Bake at 400°F for 10 minutes more.
    Notes:
    Chicken Tater Tot Casserole
    • I changed the oven temperature to 400, instead of 375, because I think that it cooks the Tater Tots best this way - I like the Tater Tots more crispy on the outside.
