Kielbasa, Cabbage and Onion Dinner in the Crock-pot

Kielbasa, Cabbage & Onions in the Crock-pot
I mentioned in one of the weekly dinner menu's that I was planning to make Kielbasa, Cabbage and Onion Dinner in the Crock-pot based on a pin from a while back.

I finally had all of the ingredients on hand and went to work.  This is a great cool weather meal.  After we ate dinner, I realized that this reminded me a lot of my Nana's Boiled Dinner.  She made hers with corned beef, which I also love.

Next time, I am going to add potatoes, carrots and whole onions to the Crock-pot and have a Polish Inspired Boiled Dinner! 

Kielbasa, Cabbage & Onions after cooking

All you need is:
1 lb of Kielbasa (any variety)
1 head of Cabbage
2 onions
1/4 cup of water
1 stick of butter
salt & pepper

Here are my instructions:
  • Spray the Crock-pot with non-stick spray like Pam.
  • Remove the outer layer of the cabbage and then chop the cabbage into quarters.  If you prefer, slice off the "core" of the cabbage and throw it away (or, give it to the bunnies like we do).  Add the cabbage quarters to the Crock-pot.
  • Peel and slice the onions into quarters and add them to the Crock-pot.
  • Slice the Kielbasa into small pieces and add those to the Crock-pot.
  • Add 1/4 cup of water to the Crock-pot.
  • Slice the stick of butter into pats and spread those out in the Crock-pot.
  • Sprinkle salt and pepper onto everything in the Crock-pot.
  • Cover the Crock-pot and cook for 4 hours on low (Please note that my Crock-pot cooks fast and 4 hours on low cooks almost everything!  So, adjust the time based on your Crock-pot.).

Yes, I like mine with mustard.

Disclosure:
This recipe was a not a hit with my kids at all (they are both 4).  My son loves Kielbasa so he gobbled it up but wouldn't eat the cabbage or the onions, even when they were dipped in mustard.  My daughter tried a teeny-tiny bite of the cabbage and declared it to be gross.  She declared the same with the Kielbasa and wouldn't even try the onion.

Crock-Pot Chicken Broccoli Alfredo


Crock-pot Chicken Broccoli Alfredo
From my freezer, I removed a freezer bag full of deliciousness, or Chicken Broccoli Alfredo.  I let it defrost for 24 hours and then I cooked it in the Crock-pot on low for 4 hours.  (I find that my Crock-pot runs hot and I feel that my meals cook really fast, even when on low).

In our weekly menu, I planned to serve this.  The nice thing about having frozen meals is that they are sitting there waiting for you.  If you have time to defrost them then dinner at home can be saved on those crazy evenings!  This recipe came from the Sis Sister's Crock-pot Freezer cooking that I did a while back.  Next time I do it, I will definitely take pictures and blog about it.
I served this over Linguini (It's Barilla, but I bought it before the drama went down.).

All you need is:
1.25lbs of cubed chicken breasts
2 jars of Alfredo Sauce (I like Classico, it can be seen here on Amazon)
1 16oz bag of frozen Broccoli Florets
1 diced green pepper
diced mushrooms to suit your family (I have an allergy/sensitivity so we omit these)
pasta of your choosing

I also baked some Texas Toast to go with our dinner.  If you buy some, they also have a version with cheese on top that is so yummy!

Weekly Dinner Menu: October 8, 2013

Sorry that the menu is late!  I have a had a horrible headache/sinus thing going on.

Monday - Crockpot:  Chicken & Broccoli Alfredo from Six Sisters
This was served with linguini and was delish!!

Tuesday -  Fish:  Mediterranean Tilapia, dinner roll, Garlic Rubbed Roasted Cabbage from Everyday Maven (I never bought the cabbage last week - whoops!).  Maybe another side - a carb - since my husband is home and he will be wondering where the carb is, haha!

Wednesday - Chicken, Green Beans and Potatoes from this site.  If I get I together - the kids & I will also make one of these for Great Grampa.

Thursday -   leftovers

Friday -   Meatloaf (Fannie Farmer's recipe, with 1 packet of Lipton's Onion Soup Mix added in), mashed or scalloped potatoes, corn.

Saturday - Crock-pot BBQ Cranberry Chicken from Six Sisters, mashed and peas or carrots (maybe I will put carrots in the Crock-pot).

Weekly Menu: September 30, 2013

Monday - Crockpot:  Pineapple Glazed Ham with beans or egg noodles and a veggie from Six Sisters

Tuesday -  Fish:  Parmesan Tilapia, dinner roll, Garlic Rubbed Roasted Cabbage from Everyday Maven and maybe another carb like rice or mashed

Wednesday -  Garlic Baked Shrimp inspired by Normal Cooking (I use Stove-top tho because we LOVE it - don't hate), veggie or a salad or Veggie Spiral by Recipe by Photo

Thursday -   Chicken, a veggie and Mom's Awesome Cheesy Potatoes from Marvelous Recipes

Friday -   leftovers

Saturday -  Fish: Mediterranean Tilapia, dinner roll, Seasoned Roasted Potatoes from Cook Glee with a veggie of some sort (frozen broccoli maybe but we are having broccoli on Sunday)

Sunday -   Crockpot: Chicken Broccoli Alfredo from Six Sisters over egg noodles or linguini

Look at my menu!  Every day accounted for and sides are even included!  I've got my grocery list together and I will pick up some ingredients when I do my Ibotta trip tomorrow.

Ham & Potato Casserole - Crockpot Recipe

I made this for the first time:
 
Yes, it's from Six Sisters Crockpot Freezer Cooking.  I made so many yummy dinners based on their recipes and directions.  Next time I do it, I will blog about it.
 
This recipe is ham and hash brown potatoes and some other stuff.  You can add veggies to this easily.  The part I found surprising was that you add instant stuffing to the top of this casserole.  My only suggestion is that this recipe needs more cheese!  I did use store brand cheese, maybe a better brand would help?

Maple Dijon Glazed Chicken - Crockpot


 
I took this out of the freezer last weekend.  It was part of the Crockpot freezer cooking from Six Sisters that I am obsessed with.  They have done 2 articles with 18 recipes, I believe.  I made a bunch and froze them per the directions on the website.
 
My pic above is how it looked in my Crockpot.  I think it had a bit too much liquid and I think that next time I will put less mustard and less maple syrup but will keep the ratios the same as in the recipe because the flavor was really good.
 
Another option would be to put the Crockpot on high and try to evaporate some of it.
 
I served this with egg noodles and corn or peas, I can't even remember which.  I think that fresh carrots would work well in the Crockpot, too.

Beef & Onion French Dip Sandwiches

Mmmmmmmmmmm, YUM!

As planned on the weekly menu, I made these delicious beef sandwiches.  I got the recipe from Six Sisters.  The only thing that I changes was that I added ONIONS!  I added 1 package of Lipton French Onion Soup mix and I diced up 2 whole onions.  Next time I will dice up 4-5 onions because there were not enough for us.

The Lipton soup made the au jus really tasty so I'm glad I added it.  But, any more than 1 packet would be too salty.

Crockpot Chicken Divine


MMM, this was yummy. My only complaint was that the broc turned to mush. Def. us the 2nd bag of broc (I thought that it would over stuff the crock pot but next time I'm going for 2 bags).
This whole site has great recipes!
