Weekly Dinner Menu - December 16, 2013

Monday -   Kielbasa, Cabbage and Onions in the Crockpot like we made HERE.

Tuesday -   Easy Pasta Dish -  Manicotti and Meatballs
  
Wednesday -  leftovers


Thursday -    Social Engagement so no dinner at home.


Friday - Broiled shrimp & scallops (we have a little leftover of both of these) with oven baked potatoes of some sort and a green veggie.

Saturday -   Tilapia or Cod with a sides that are TBD.
  
Sunday -    TBD - I am considering ending the menus on Saturday because I am still planning for today's meal (Sunday) on the day I prep the menu.  It seems to be a consistent challenge to come up with Sunday's meal so look for a shake-up next week.

Last Sunday we didn't make anything in the Crockpot but on Monday, my husband made sweet Italian sausage, peppers, onions and potatoes and they came out great.  We wanted to buy a second Crockpot.  We ended up getting the Ninja and this was our first experience using the Ninja as a slow cooker.

Sickness came to our house in a big way last week (strep x2) so the menu is completely out of sync.  Tonight we are having company so I am making the veggie spiral and the Coca Cola Chicken.

Weekly Dinner Menu - December 9, 2013

Monday -   Buffalo Mac & Cheese.  We made it before HERE.  We were hoping to make this last week but we never did.

Tuesday -   Easy Pasta Dish - Spaghetti & Meatballs. 
  
Wednesday -      Tilapia or Cod with a delicious Veggie Spiral like the one we made HERE.

Thursday -     Coca Cola Chicken inspired by Six Sisters HERE.  There are tons of variations of this recipe floating around the internet.  Sides will be mac&cheese and a veggie.

Friday -  leftovers
Saturday -   Shrimp, seasoned baked potatoes and a veggie.
  
Sunday -    Once again, I want to make something big & yummy in the Crock-pot but, I don't know what yet.  Once I decide I will post about it.  (I know that I owe an update for last week, too.  All I have so far is that it will be something with sausage in it).

Weekly Dinner Menu - November 24, 2013

Monday -   Beef with BBQ (leftover from the freezer), corn and mashed potatoes.  I was picturing a Shepherd's Pie type of meal but I am not sure I will have time to layer it and bake it since it's a Monday night.  But, you never know when inspiration may strike!


Tuesday -  Easy Pasta: Tortellini in Chicken Broth with celery and veggies.

 
Wednesday -    Meatloaf with mashed potatoes and a veggie.  I hope to post a My Husband Cooks post after this meal.

 
Thursday -  HAVE A HAPPY THANKSGIVING
 

Friday -  Turkey leftovers, yum yum!
 
 
Saturday -    Tilapia with some kind of baked potato sides (maybe those Pioneer Woman smashed potatoes) and carrots.

 
Sunday -    6 Can Chicken tortilla Soup (2 cans chicken broth, 1 can corn, 1 can of Rotelle, 1 can of black beans and 1 can of chicken).  Serve with tortilla chips.

Thursday -  An Easy Frozen Pasta like Shells, Tortellini or Manicotti.  Serve with some bread and a side salad.
 

Friday -  Tilapia with green beans & garlic and scalloped potatoes.
 
 
Saturday -    French Stuffed Potatoes from my Monthly Challenge (To Cook From My Cookbooks).  Serve with carrots or broccoli.  (OK - I STILL haven't managed to make this).

Thursday -  French Stuffed Potatoes from my Monthly Challenge (To Cook From My Cookbooks).  Serve with carrots or broccoli.  We didn't make this last week as we ended up with too much food.

Saturday -   Breakfast For Dinner: French Toast Sticks and Diced Fruit.

Sunday -    5 Can Chili from Pinterest with DIY Taco Seasoning.  Add cheese, sour cream, corn chips and so on.

Dinner Menu - October 27, 2013
Monday -  Kielbasa, Cabbage & Onions in the Crock-pot made from a Pin that I have had for a while based on this recipe from Mostly Homemade.

Tuesday -  Sweet and Sour Meatballs in the Crock-pot (from the freeze) from Six Sisters Freezer Cooking.  I am going to serve this with egg noodles and carrots.
 
Wednesday - Tilapia with twice baked frozen potatoes and peas.
 
Thursday -  Cheese Tortellini with Chicken Broth.  May add carrots and celery to broth.  May serve with bread.  (I never made this last week).

Friday -  leftovers
Saturday -  Butter&Lemon Shrimp, Mom's Cheesy Potatoes and a veggie.  (We didn't have a chance to make this shrimp last week - again!).
 
Sunday -   TBD because I want to plan something really good for cool weather and nothing has hit me yet in the inspiration department.

Monday - Leftover's from Sunday.  Creamy Ranch Chicken & Potatoes with a veggie.

Tuesday - Cheese Tortellini with Chicken Broth.  May add carrots and celery to broth.  May serve with bread.
Wednesday - Tilapia, twice baked potatoes (frozen) and a veggie.
 

Thursday - Ham & Potato Casserole and a veggie

Friday - leftovers
Saturday - Camping food (actual meal TBD) but maybe something from my camping board on Pinterest.
Sunday -   Butter&Lemon Shrimp, Mom's Cheesy Potatoes and a veggie.  (We didn't have a chance to make this shrimp last week).

Weekly Dinner Menu: October 13, 2013

Again I have to post that I'm sorry that the menu is late!  We have had some celebrating (yay!), someone in the hospital (boo) and a wake to attend (sad).

Monday - leftover Stuffed Shells, salad and meatballs.  Garlic Bread if you are well behaved!

Tuesday -  I WAY overcooked:  leftover Stuffed Shells, salad and meatballs.  Garlic Bread if you are well behaved!

Wednesday - Crock-pot freezer cooking Beef & Peapods with rice or egg noodles.  This is from Six Sisters.  They use mushrooms but I have a bad, ugly, awful reaction to mushrooms now so I made this dish with peapods instead.

Thursday -   Parmesan Tilapia, frozen ready-to-bake Twice Baked Potatoes and a veggie.

Friday -   Mini Cocktail Hot Dogs, Bush's Baked Beans, Pearl Onions and another veggie that the kids will actually eat.  For 6 months or so, my kids have refused to eat hot dogs.  As they are not particularly good for you, that wasn't an issue for me.  But, recently they have been asking for them so I will see how the cocktail hot dogs go over!
 
Saturday - Butter&Lemon Shrimp, Garlic Cabbage from this site and a baked potato. 
 
Sunday -   Freezer Crock-pot Cooking:  Creamy Ranch Chicken and Potatoes from Six Sisters.

Weekly Dinner Menu: October 8, 2013

Sorry that the menu is late!  I have a had a horrible headache/sinus thing going on.

Monday - Crockpot:  Chicken & Broccoli Alfredo from Six Sisters
This was served with linguini and was delish!!

Tuesday -  Fish:  Mediterranean Tilapia, dinner roll, Garlic Rubbed Roasted Cabbage from Everyday Maven (I never bought the cabbage last week - whoops!).  Maybe another side - a carb - since my husband is home and he will be wondering where the carb is, haha!

Wednesday - Chicken, Green Beans and Potatoes from this site.  If I get I together - the kids & I will also make one of these for Great Grampa.

Thursday -   leftovers

Friday -   Meatloaf (Fannie Farmer's recipe, with 1 packet of Lipton's Onion Soup Mix added in), mashed or scalloped potatoes, corn.

Saturday - Crock-pot BBQ Cranberry Chicken from Six Sisters, mashed and peas or carrots (maybe I will put carrots in the Crock-pot).

Wednesday -  Garlic Baked Shrimp inspired by Normal Cooking (I use Stove-top tho because we LOVE it - don't hate), veggie or a salad or Veggie Spiral by Recipe by Photo

Thursday -   Chicken, a veggie and Mom's Awesome Cheesy Potatoes from Marvelous Recipes

Friday -   leftovers

Saturday -  Fish: Mediterranean Tilapia, dinner roll, Seasoned Roasted Potatoes from Cook Glee with a veggie of some sort (frozen broccoli maybe but we are having broccoli on Sunday)

Sunday -   Crockpot: Chicken Broccoli Alfredo from Six Sisters over egg noodles or linguini

Look at my menu!  Every day accounted for and sides are even included!  I've got my grocery list together and I will pick up some ingredients when I do my Ibotta trip tomorrow.

Weekly Menu - September 8, 2013

I have been really inspired by Six Sisters Stuff since we returned home from vacation.  I made a bunch of their crock-pot freezer meals and stored them in our upright freezer.  You freeze them in gallon Ziploack bags, stored flat.  So, even if you just have 1 conventional freezer, you should be able to store at least a few freezer meals.  I would like to do a post about their crock-pot freezer meals soon.

I really need to work on making sides and veggies more interesting.  Pinterest helps with that, for sure!  We usually end up with a simple veggie and some kind of side.  Lately, I have been doing rolls/bread as our carb side dish.


Monday - leftover beef sandwiches from Sunday's French Dip Sandwiches
(I actually made this right after our grocery store trip (it wasn't frozen)).

*About the fish, this is frozen but ready-to-bake fish.  I can't take anymore fish drama LOL!

Weekly Menu - about


Every week I do a weekly menu to figure out what we will be eating for the coming week.  I start the menu on Monday and end it on Sunday which may seem odd but it works for us.  I usually just put the meat product or the pasta product and I don't usually put the sides dish or veggies.  But, I do serve veggies for anyone who is concerned that we are strictly carb carnivores!

If we have fresh veggies on hand, we have fresh veggies.  If we don't have fresh veggies, we usually have a selection of frozen veggies.  My absolute favorite frozen veggies are the ones that you microwave right in the bag.  I love those because there are so easy and they don't create any dirty dishes for the dishwasher.

We do a cycle of pasta, egg noodles, couscous, mashed/baked/sliced/instant potatoes, brown sugar beans or rice. 

I look in the fridge, freezer and cabinets and figure out what we have on hand and what needs to be purchased.  I usually grocery shop on Tuesdays, except for the week that I skip grocery shopping and the week that I go to BJ's Wholesale Club.  I go to BJ's on whichever day of the week we can get there; yes, I am wild & crazy like that.

You will see that I sometimes have to adjust the menu midweek.  Sometimes I have an ingredient go bad, sometimes I have a recipe go bad, sometimes I don't end up with as many servings as expected and sometimes we have company or end up going out.

I once got this great little magnet pad from Betty Crocker that I write our meal plan on, and keep it on the fridge.  This is what our meal plan looks like, very basic:
